Apple Fennel Salad

Ingredients:

2 cups fresh Spinach or Arugula

½ Small Fennel Head

1 Medium Granny Smith Apple

½ Small Red Onion

Vinaigrette:

¼ cup 100% Apple juice

3 Tablespoons Walnut oil

2 Tablespoons Apple cider vinegar

1 teaspoon Agave nectar

Directions:

Combine vinaigrette in a small jar and shake well to combine

Peel and cube the apple. Slice the fennel and onion.

Thoroughly wash spinach, removing fibrous stems.

Dry and place in salad bowl. Add fennel, apples and onions.

Toss with vinaigrette.

Makes 2 servings
