Ingredients:

½ -14 ½ ounce can chickpeas

½ roasted red pepper

¾ teaspoon garlic, minced

¾ Tablespoon tahini

¾ teaspoon olive oil

1 ½ Tablespoon fresh lemon juice

¼ teaspoon curry powder

1/8 teaspoon ground cumin

1/8 teaspoon ground coriander

¾ teaspoon table salt

1/8 teaspoon black pepper, freshly ground

Directions:

Drain chickpeas, reserving 2 Tablespoons of liquid.

Place chickpeas, reserved liquid and remaining ingredients in a food processor; process 2 minutes or until very smooth. Cover and chill 2 hours.

Makes 4 servings
