Ingredients:
½ teaspoon salt
½ teaspoon garlic clove, minced
2 large ripe tomatoes, seeded and finely chopped
1 small onion, finely chopped
¼ cup finely chopped fresh cilantro
2 teaspoons jalapeno pepper seeded and finely chopped (wear gloves to prevent irritation)
2 teaspoons fresh lime juice
1 lb. boneless, skinless chicken or turkey breast
4 cups cooked great northern beans
2 cups homemade chicken broth
Shredded almond cheese (optional)
Directions:
On a cutting board, sprinkle the salt over the garlic. Mash to a paste with the flat side of a knife.
In a small bowl, combine the mashed garlic, the tomatoes, onion, cilantro, jalapeno, and lime juice. Let stand at least ½ hour before serving to allow the flavors to blend.
Cook and shred the chicken or turkey breast; set aside. In a large saucepan, mix together the beans, broth, and salsa. Heat through and add extra broth, if desired. Stir in the meat and garnish with almond cheese and extra cilantro, if desired. Serve hot.
