Coconut Rice

Coconut Rice

1/2 cup coconut milk

1/2 cup water

1 teaspoon ginger root, fresh, minced

1/4 teaspoon table salt

1/2 cup brown basmati rice

1/4 cup scallion, chopped

2 Tablespoons sliced almonds

1/2 medium lime, cut into wedges


In a small saucepan, combine coconut milk, water, ginger and  salt; bring to a boil over medium-high heat. Stir in rice; reduce heat, cover and simmer until rice is tender and most of liquid is absorbed, about 20 minutes.

Remove from heat; add scallions and do not stir. Cover and let stand for 5 minutes. Sprinkle with almonds; fluff rice with a fork. Serve with lime wedges to squeeze over rice.
