Romaine, Radish & Cucumber Salad

For tahini dressing

2 Tablespoons well-stirred tahini (Middle Eastern sesame paste)

2 Tablespoons water

1 ¼ Tablespoons fresh lemon juice

1 Tablespoon soy sauce or Bragg’s liquid aminos

½ Tablespoon pure maple syrup

½ small garlic clove, minced

¼ teaspoon salt

Dash cayenne pepper

For salad

1/2 large head romaine, torn into bite-size pieces (3 cups)

4 small radishes, trimmed, halved, and thinly sliced

¼ seedless cucumber (usually plastic-wrapped), halved lengthwise and thinly sliced crosswise

2 scallions, thinly sliced


Blend all dressing ingredients in a mini-blender until smooth. (If desired, blend in more water, 1 teaspoon at a time, to desired thickness)
Toss together all salad ingredients in a large bowl with just enough dressing to coat.

Makes 2 servings
