Gluten Free Meatballs

Ingredients:

1 lb. ground turkey

1/2 small onion, finely diced

1/2 clove garlic, minced

1 Tablespoon chopped fresh parsley

1/2 teaspoon finely chopped fresh ginger

Sea salt to taste

Freshly ground pepper to taste

1 egg

Directions:

Preheat oven to 400F

Place all the ingredients in a medium bowl and mix lightly with your hands to combine. Roll into 1 ½-in balls.

Line a baking sheet with parchment paper. Place meatballs, evenly spaced on parchment. Place tray in preheated oven and bake 20-25 minutes or until meatballs are cooked through.

*To make a freezer meal, divide the cooled meatballs into two small freezer bags and store in the freezer until needed.
