Coconut Curry

½ lb. ground turkey
2 Roma tomatoes, chopped
½ small onion, diced
½  -13.5 ounce can of coconut milk
1 clove garlic, minced
1 Tablespoon coconut or olive oil
½ small jalapeno (seeds removed), diced
¼  teaspoon cayenne pepper
¼ teaspoon turmeric powder
¼ teaspoon curry powder
Salt to taste


Chop up the onions, garlic and jalapeno pepper – you can use your food processor to save time. Add them to a frying pan with the ground turkey and a tablespoon of coconut oil for 5 minutes. Then add all the other ingredients, and simply leave it to simmer for 30 minutes on a low heat.
