Asian Chopped Veggie Salad

1 red bell pepper, diced

2 green onion, sliced

1 small head broccoli, chopped

2 small carrots, shredded

1 small head Romaine, chopped


¼ cup + 2 Tablespoons lemon juice

2 Tablespoons soy sauce or Bragg’s liquid aminos

2 Tablespoons sesame oil

2 teaspoons fresh ginger, peeled and finely minced

½ teaspoon white pepper

¼ teaspoon crushed red pepper

¼ garlic clove

1 teaspoon pure maple syrup


In a serving bowl, combine lettuce, bell pepper, green onion, broccoli and shredded carrots.

Rub bowl or jar with tight fitting lid with garlic clove. Combine lemon juice, soy sauce, sesame oil, ginger, white pepper and red pepper and pure maple syrup. Shake or whisk to combine.

Pour dressing over salad and toss to combine.

Makes 2 servings
