**Cornflakes and breadcrumbs are not usual ingredients you would find on this website; however, this recipe was inspired by a challenge to find a healthier alternative to traditional ‘Funeral Potatoes’.  And what are funeral potatoes without the crunchy corn flake topping?

Ingredients:

2 heads cauliflower, washed and cut into large pieces

2 Tablespoons unsalted butter or ghee

2-4 Tablespoons cream cheese

½ teaspoon sea salt

¼ cup chopped green onions

2 Tablespoons unsalted butter or ghee, melted

¾ cup crushed cornflakes or panko bread crumbs

Directions:

Steam the cauliflower pieces until very tender.

Puree cauliflower in a food processor, add in butter, cream cheese and salt to taste. Stir in green onions and spread in the bottom of a lightly greased casserole dish.

Combine melted butter and cornflake crumbs. Sprinkle crumb mixture over the top of the cauliflower mixture.

Bake in the oven at 350° for 20 minutes or until crumb topping is nicely browned.

Makes 6-8 servings
