Zucchini Pancakes

zucchini pancakesIngredients:

2 whole eggs

4 egg whites

1 cup zucchini, grated

1 Tablespoon onion, minced

1/4 Red bell pepper, diced

1 teaspoon olive oil

1/4 teaspoon black pepper

1/4 teaspoon onion powder

1/4 teaspoon garlic powder

1/4 teaspoon salt

Olive oil

Directions:

Combine all ingredients in a bowl and whisk vigorously to break up yolks. Preheat a griddle pan or skillet with olive oil. With a serving spoon, ladle egg mixture onto skillet pan to form “pancakes”. Cook 2 minutes each side or until eggs are cooked through and slightly browned. Serve immediately.
