1 large scallion, white and green parts chopped

¼ cup chopped fresh cilantro leaves, lightly packed

1 Tablespoon freshly squeezed lemon juice

¼ teaspoon dry mustard

½ Tablespoon olive oil

1 garlic clove, chopped

¼ – ½ teaspoon sea salt (to taste)

½ teaspoon freshly ground black pepper

½ cup homemade mayonnaise

½ cup plain Greek-style yogurt


Place the scallions, basil, lemon juice, mustard, olive oil, garlic, salt and pepper in the bowl of a food processor fitted with a steel blade. Puree for 15 to 20 seconds to make a smooth mixture. Add the mayonnaise and yogurt and blend until smooth. Transfer the dressing to a container, cover and refrigerate for 1 hour for the flavors to develop.
