2 Tablespoons olive oil

1 pound butternut squash, peeled, seeded, cut into ¾-inch-thick sticks

1 teaspoon sea salt, or to taste

½ teaspoon chili powder, or to taste (optional)


Preheat oven to 450 degrees F and place a heavy baking sheet in the oven.

Prepare squash by cutting into 1/4-inch sticks.  Cut sticks into 3-inch segments.

Place sticks into medium-sized bowl and toss with 1 Tablespoon olive oil.

Pour remaining olive oil onto baking sheet and using an oven mitt lift baking sheet and turn to coat with olive oil.  Return to the oven and allow sheet pan to reheat, about 2-3 minutes.

Open oven door and pour the squash fries onto hot sheet pan in a single layer. Do not crowd. Sprinkle with sea salt and chili powder.

Place sheet pan on bottom oven rack, turning squash fries and rotating sheet pan every 5-6 minutes until cooked through (about 15 minutes).
