arugulaIngredients:

2 cups arugula

1 small bulb Fennel, thinly sliced into half-moons

1 Tablespoon Extra-virgin Olive Oil

1 Tablespoon Red Wine Vinegar

½ Tablespoon Shallot, chopped

1 Tablespoon Fresh Lemon Juice

¼ teaspoon Lemon Zest, finely grated

Sea salt and black pepper to taste

Directions:

Combine Fennel and Arugula in a bowl.

Combine remaining ingredients and drizzle over salad. Toss and Serve
