Kalua Pork in a Slow-Cooker

Ingredients:

1 (3 lb.) pork butt

1/4 – 1/2  Tablespoons Hawaiian sea salt

2 slices nitrate-free bacon

1 banana

Directions:

Place the bacon strips on the bottom of a slow cooker. Pierce pork all over with a fork. Rub salt over meat and place on top of the bacon in the slow cooker. Slit the banana on one side and place on top of the roast.

Cover, and cook on Low for 8 to 10 hours, turning once during cooking time keeping the banana on top.

Discard the banana. Remove meat from slow cooker, and shred, adding drippings as needed to moisten.

Makes 6-8 servings
