Mango and Black Bean Cups

¼ red onion, diced

½ mango, peeled, pitted, and diced

¼ red bell pepper, seeded and diced

¼ cup fresh or thawed frozen corn kernels

½ cup canned black beans, rinsed and drained

1 Tablespoon fresh lime juice

1/8 teaspoon salt

Dash freshly ground pepper

1 Tablespoon chopped fresh cilantro

1 small head Boston lettuce


In a medium bowl, combine the onion, mango, bell pepper, corn, beans, lime juice, salt, and pepper. Let stand 5 minutes to allow the flavors to blend. Stir in the cilantro. Fill lettuce cups with black bean mixture and devour!
