Classic Potato Salad

1 pound potatoes, peeled and cut into ¾ – inch chunks

½ cup Homemade mayonnaise

1 Tablespoon apple cider vinegar

¾ teaspoon sea salt

½ teaspoon agave

1/8 teaspoon ground black pepper

1 stalk celery thinly sliced

2 green onions, thinly sliced

1 hard-boiled egg, chopped


Cover potatoes with water in a 2-quart saucepot; bring to a boil over medium-high heat. Reduce heat and simmer 10 minutes or until potatoes are tender. Drain and cool slightly.

Combine mayonnaise, vinegar, salt, agave and pepper in a medium bowl. Add potatoes, celery, green onions and egg and toss gently. Serve chilled or room temperature.
