½ small bunch Romaine Lettuce, chopped

1 small Plum or Roma Tomato cut into wedges

¼ Cucumber, peeled, seeded, and chopped

¼ Red Onion, cut into thin slices

¼ Green Bell pepper, seeded and sliced

½ cup Almond Cheese (optional)

¼ cup Kalamata Olives

½ Avocado, diced (optional)


¼ cup olive oil

¼ cup balsamic vinegar

Juice of ½ lemon

1 cloves garlic, minced

Salt & Pepper to taste


Combine salad ingredients into a large salad bowl.

Whisk dressing ingredients in a small bowl, or shake in a dressing container and pour over salad and toss.
