Tex-Mex Turkey Wraps

Ingredients:

20 ounces turkey breast tenderloins

Salt and Pepper to taste

½ medium onion, chopped

2 ½ Tablespoons water

1 Homemade Taco Seasoning  recipe

8 large lettuce leaves

2 cups shredded lettuce

2 tomatoes, diced

1 avocado, diced

¼ cup Greek-style plain yogurt (if desired)

Directions:

Place turkey in a 3 ½ to 4 quart slow cooker. Sprinkle with seasoned salt and pepper. Add onion and water.

Cover and cook on low heat setting 4-6 hours or until juice of turkey is no longer pink when center of thickest pieces are cut.

Remove turkey from slow cooker. Shred turkey, using 2 forks. Measure liquid from slow cooker; add enough water to liquid to measure 1 cup. Mix seasoning mixes (dry) and liquid mixture in slow cooker. Stir in shredded turkey.

Cover and cook on low heat setting 1 hour.

Place 2 lettuce leaves side by side- overlap about 1 inch. You should have 2 lettuce arrangements equal the size of a tortilla or 8 potato wraps. Spoon turkey onto center of each tortilla; top with lettuce, tomatoes, avocado, and a dollop of yogurt if desired.
