Spicy Jamaican Jerk Chicken and Potatoes

Ingredients:

4 bone-in split chicken breasts

4 teaspoons olive oil

2 medium baking potatoes (or sweet potatoes), cut lengthwise into fourths

Jamaican Jerk Seasoning Blend:

2 teaspoons dried minced onion

1 ½ teaspoons dried thyme leaves

2/3 teaspoon ground allspice

2/3 teaspoon ground pepper

Salt and Pepper to taste

Dash of Cinnamon

Directions:

Make Jamaican Jerk Seasoning.

Heat oven to 375. Line roasting pan with aluminum foil.

Place chicken, breast side up, on rack in roasting pan. Brush 2 teaspoons of the oil over chicken. Rub half of the seasoning into chicken skin. Insert meat thermometer in chicken so tip is in thickest part of inside thigh muscle and does not touch bone.

Brush remaining 2 teaspoons oil over potatoes. Sprinkle with remaining seasoning mix. Place potatoes on rack around chicken.

Roast uncovered 1 hour or until potatoes are tender, thermometer reads 180 and juice of chicken is no longer pink when center of thigh is cut. Let chicken rest about 15 minutes before servings.
