Ingredients:

1 small bunch Romaine Lettuce, chopped or 4 cups mixed salad greens

2 small Plum or Roma Tomatoes cut into wedges

½ Cucumber, peeled, seeded, and chopped

¼ Red Onion, cut into thin slices

½ Green Bell pepper, seeded and sliced

Almond Cheese, shredded (optional)

½ cup Kalamata Olives

Dressing:

¼ cup olive oil

¼ cup balsamic vinegar

Juice of ½ lemon

1 cloves garlic, minced

Salt & Pepper to taste

Directions:

Combine salad ingredients into a large salad bowl.

Whisk dressing ingredients in a small bowl, or shake in a dressing container and pour over salad and toss.

Makes 2 servings
