Chimichurri Sauce

½ cup (packed) fresh Italian parsley, chopped

1/3 cup olive oil

3 Tablespoons lemon juice

3 Tablespoons fresh cilantro, chopped

1 garlic clove, peeled, minced

½ jalapeno pepper (other peppers or chiles will work), minced

¼ red bell pepper

¼ red onion

¼ teaspoon Sea salt

4 leaves fresh basil

1/3 Tablespoon fresh oregano


Pulse parsley, cilantro, basil and oregano in a food processor till minced. Set aside in a bowl. Add garlic, jalapeno, onion, and red bell pepper to processor. Pulse until chopped. Combine all the pulsed ingredients as well as oil, lemon juice and salt in a bowl and stir to combine.

Makes approximately 1 ½ cup
