Red Cabbage and Golden Apple Sauté

Ingredients:

1 teaspoon olive oil

1 onion, sliced

1 small red cabbage, sliced

½ teaspoon caraway seeds

½ cup water

1 Golden Delicious apple, peeled and diced

1 teaspoon red-wine vinegar

Salt and pepper to taste

Directions:

Heat the oil in a large nonstick skillet or Dutch oven over medium heat. Add the onion and cook, stirring occasionally, until softened, about 5 minutes. Stir in the cabbage, caraway seeds, and water. Simmer, covered, until the cabbage is barely tender, about 8 minutes. Add the apple, vinegar, salt, and pepper. Simmer, covered, until the cabbage is very tender, about 6 minutes longer.

Makes 4 servings
