Ingredients:

1 ½ cup roasted pumpkin
1 cup homemade chicken stock
3/8 cup can coconut milk (Use a ¾ measuring cup and fill half way-this equals 3/8 cup)
Dash of M’lis Sweet
1 Tablespoon lemon juice, fresh squeezed
½ Tablespoon ginger, minced

Directions:

In a blender or food processor, combine pumpkin, chicken stock and coconut milk and process on high until smooth.

Blend in M’lis Sweet, lemon juice and ginger.

Place mixture in a pot and bring to a boil then reduce to a simmer and cook for 5 minutes.

Makes 2 servings
