Ingredients:

¼ cup red split lentils

½ large onion

½ clove garlic, minced

1 cup chopped tomatoes

2 cups homemade chicken stock or water

½ teaspoon grated lemon rind

½ Tablespoon chopped cilantro

Sea salt to taste

Directions:

Wash the lentils, finely chop the onion and press the garlic.

Place all the ingredients into a saucepan, bring to a boil, and simmer for 20-30 minutes.

Makes 2 servings
