Ingredients:

½ small bunch Kale finely chopped
½ cup carrots shredded
½ cup of grape tomatoes
2 Tablespoons soaked pine nuts
¼ small red onion cut into thin rings
Juice of ¼ lemon
1Tablespoon olive oil
Crushed garlic to taste
Sea salt to taste

Directions:

Mix all ingredients…set in fridge overnight.

Makes 1 serving
